
Gluten-free peasant strudel
Dough
- 320 g Bakery mix Liana
- 110 ml of milk
- 100 ml lukewarm milk (for yeast)
- 40 g of sugar
- 30 g of oil
- 20 g of yeast
- 1 tbsp sugar
- 1 egg
- ½ KL lemon peel or Liana Lemon Topping
Filling
- 250 g lumpy cottage cheese
- 50 g of sugar
- 30 g dried fruit (cranberries or raisins or plums)
- 1 bag Vanillin sugar Liana
- 1 PL Golden cream Liana
- 1 egg
Sprinkler
- 40 g of Liana rice flour
- 20 g powdered sugar
- 15 g of butter
Next we need
- 3 Tbsp plum jam + 1 Tbsp rum for rubbing
- beaten egg for brushing
- Liana rice flour for sprinkling
- Mix sugar and yeast in lukewarm milk. Let stand for 15 minutes until the yeast forms.
- Put all the ingredients for the dough into a food processor together with the leavened yeast. Mix a compact dough with a hook, cover and leave to rise in a warm place for 60 minutes.
- Mix finely chopped dried fruit with cottage cheese, sugar and egg. If the mixture is thin, add a spoonful of Golden Cream. Place the ingredients for the sprinkles in a bowl and combine with your hands into a crumbly mass.
- Roll out the leavened dough on a floured board to a sheet about 4 mm thick. Spread the cheese filling and roll the dough from both sides towards the center like a strudel. Bend the sides so that the filling does not leak out. Cover and leave to rise for another 15 minutes.
- Spread the top with plum jam mixed with rum, sprinkle with sprinkles and brush the sides with a beaten egg. Bake in a heated oven at 180°C for 35 minutes.
