Will you never enjoy your favorite treats again? These questions are completely natural, and even if it seems like the end of the world for your taste buds right now, it's not at all.

Celiac disease is an autoimmune disease, so even if gluten doesn't seem to cause you any problems at first, it shouldn't be taken lightly. If you expect it to cause grazing problems, it might not. Symptoms of celiac disease include weakened immunity, reduced iron and calcium levels, acne problems and even depression. Gluten is composed of proteins found primarily in cereals, barley, wheat, rye and oats. It finds its application mainly during baking, when it gives the dough the necessary flexibility. It is important to pay attention to even minimal amounts of gluten in the diet, because even a small amount can cause problems that may not be visible at first glance. At the time when the body should fight against possible viruses, it starts fighting exclusively against gluten, which can result in a cold or flu. You may be surprised by the fact that gluten is not only found in baked goods, pasta or biscuits. You can also find traces of gluten in semi-finished products and products that are produced in the same factory as regular gluten foods. It is important to focus on the composition of e.g. frozen fries, croquettes, ice cream, even ketchup or mustard, but also cosmetics. It is ideal to carefully read the composition of each semi-finished product or finished product that is not marked as GLUTEN FREE.

The times when celiacs were limited in their diet are long gone. You will find many products on the market that look and taste like "gluten" and yet are gluten free. However, the biggest change can be felt primarily in the home preparation of food. It is no longer necessary to try single-type flours, which suits which recipe better. Today in stores you can find pre-prepared gluten-free flour mixes that will make your daily meal preparation easier. Since their composition is already tested and best adjusted for the chosen type of food, you can count on the fact that the end result will be indistinguishable from a traditional gluten recipe, if not even better.

You can find gluten-free products in almost every large or small grocery store. Considering that celiac disease is a medical diagnosis, you are entitled to reimbursement of part of the costs of gluten-free food from the health insurance company. All you have to do is select the foods you are interested in from the prescription food list (you can find it on the Internet as "Gluten-free prescription food list"). You visit your doctor and he prescribes them. It is best if you remember the prescription codes, as your doctor may not have an updated list of them. In conclusion, you just need to visit the pharmacy and choose your products. The only drawback is the limitation of intake to a maximum of 10 kg per month depending on the age category, it is up to you whether it will be pure flour mixtures or finished products. There is also a limit for gluten-free semolina and breadcrumbs for 1-2 packages.
