Gluten-free Dubai chocolate

Dubai chocolate has taken the world by storm, and now you can make it at home, in a gluten-free version! Food blogger Magda – Celiac with Magdalénou – has created this social media hit with her own version of crispy kadayif dough, made from our Liana Universal mix.
Ingredients
Kadayif - fried dough
This amount will yield approximately 70–90 g of kadayif. We recommend making double the amount – ideal for stages, as the production is laborious.
 
For 2 pieces of Dubai chocolate we need:
  • 140 g kadayif dough
  • 50g butter
  • 360 g pistachio paste
  • 10-15 g tahini sesame paste
  • 200 g milk chocolate
  • 200 g dark chocolate
  • a few grams of white chocolate for appearance (I colored it with green food coloring and turmeric)

  1. Preparing gluten-free dough - kadayif: Mix all the ingredients and pour the dough through a sieve into a pastry bag with a very small hole. On a lightly oiled pan, create thin noodles - ideally in a circle to use the entire surface (see video). Fry them until they start to come off, let them cool and then break them into pieces.

  2. Preparing the chocolate mold:
    Spray the mold with colored chocolate (melted in the microwave without adding any additional fat) and let it set in the freezer. Then pour 100 g of melted chocolate into it, spread it on the walls and let it cool again.

  3. Preparing the filling:
    Fry the prepared pieces of kadayif dough in butter, let them cool and mix with the pistachio cream and tahini. Press the filling into the mold onto the hardened chocolate and smooth it out.

  4. Finishing the chocolate:
    Pour over another 100 g of melted chocolate and let the entire dessert cool down.
